PINK PITAYA SMOOTHIE

Here is my confession: I LOVE PINK! This was not always so – but since I have a daughter I can’t overdue pink stuff. Nothing can’t be too pink – even in my kitchen the pinkish color has arrived!

Dragon fruit or also called pitaya is the fruit of several cactus species and almost loved by everyone. Due to it’s intense shape, color, wild & extreme look you’ll be surprised by its mild taste. The texture of eating it reminds me of a kiwi because of the seeds. In Austria the fruit is imported from Central America or Asia, depending on the season.

In Austria dragon fruits are not easy to get and they are quite expensive but once in a while I have to invest in a little more pink in my life. I bought this exotic fruit at the food market called Naschmarkt – just ask for the latest delivery and you’ll get the freshest!

To the pink smoothie I also added some frozen berries – this creates a thicker consistency and will refresh you on hot summer days!

INGREDIENTS

  • 1 pitaya (dragon fruit), pink inside
  • 250ml coconut milk
  • 1 banana
  • 75g frozen black berries
  • 75g frozen rasperries

DIRECTIONS

  • Cut pitaya in halves, lengthwise – then spoon out the flesh, using a big spoon.
  • Combine all ingredients in a blender and blend till everything is smooth.
  • Pour into glasses.

    1. Hey Sharon, here in Austria it’s the other way – cheap berries when in season and really expensive dragon fruits but once in a while everyone needs to be spoiled! Have a nice day!
