CHIA FRUIT BOWL

Chia Seeds are one of my favorite foods at the moment. Besides the positive side effects I just love the texture of eating them, when they are soaked overnight. For me they are one of the best breakfast ingredients as they work really well with all kind of fruits.

Early in the morning I was fruit shopping at the “Naschmarkt” – Viennas most famous food market – and one of the market stalls just received an exotic fruit delivery. Honestly I couldn’t resist and bought some dragon fruits, physalis and a watermelon. The rest for my fruit bowl I already had at home.

When I start my day with a Chia Fruit Bowl for breakfast – I just feel great. Knowing to eat so much healthy stuff at once automatically gives me an extra lift for the day.

INGREDIENTS

  • 200ml coconut milk
  • 4 Tablespoons Chia seeds
  • 80g watermelon
  • 50g rasperries
  • 25g black berries
  • 1/2 dragon fruit, finely sliced
  • 1 kiwi, sliced
  • physalis
  • cranberries

DIRECTIONS

  • Start preparing the chia pudding a day in advance and refrigerate over night. Just put the seeds with the coconut milk in a big bowl and close it.
  • In the morning wash all fruits and slice them the way you want.
  • Start putting the sliced kiwi on top, then add the watermelon, the berries and the rest of the fruits and arrange it the way you like it.
  • Decorate with physalis.
