Apple Crumble Pie

Do you remember your parents telling you “An apple a day keeps the doctor away” every time they served you apples? A couple of years ago I saw the other quote with “If you throw it hard enough” and now I conditioned myself that every time I eat or cook with apples I have to think about itΒ and have to smile πŸ™‚

This apple crumble pie recipe is really super easy to make and it tastes so delicious – to bring some extra color to this dish I served them with frozen raspberries and a lot of whipped cream and ice cream. It’s my soul food – specially if the days get shorter then I need extra sweet stuff! Seriously!

It’s the perfect cake to prepare if you have guests on the weekend. Personally I always like warm pies so before I eat it I put it in the oven for a few minutesΒ – hope you enjoy it!

INGREDIENTS

Filling
  • 650g apples, peeled and finely sliced
  • 80ml lemon juice (2 middle sized lemons)
  • 20ml rum
  • 1 Tablespoon cinnamon
  • 1-2 Tablespoon brown sugar
  • 250g curd cheese
  • 3 eggs, separated and beaten
  • 1 vanillin sugar
  • 50g brown sugar
  • 25g semolina
Crumbles
  • 375g all purpose flour
  • 175g brown sugar
  • 250g butter, melted
Optional Garnish
  • icing sugar
  • vanilla ice cream
  • whipped cream

DIRECTIONS

  • Preheat the oven to 180Β°C.
  • Peel and core the apples, quarter and finely slice them. Put the apples into a pan with the fresh squeezed lemon juice, rum, sugar and cinnamon and simmer on lowest temperature for about 10 minutes. Stirring once in a while.
  • Meanwhile you can start preparing the crumbles. Add flour and sugar in a bowl and pour over the melted butter – combine, using a mixer with dough hooks. Set aside.
  • Separate the eggs. Beat the egg whites with the vanillin sugar until stiff. Combine curd cheese with egg yolk, sugar and semolina. Fold in the stiffed egg white.
  • Grease the pie form and add the half of the crumbles – flatten with a tablespoon so it looks like a dough. Add the apples – top with the curd cheese filling and with the rest of the crumbles. (I always use my hands adding the crumbles on top – it makes it easier to spread the crumbles equally.)
  • Put in the oven on the lowest possible rail and bake for 40-50 minutes.
  • Garnish with icing sugar, red fruits and serve with vanillia ice and whipped cream.
