Avocado Toast two ways

No time to cook? Avocado toast is a great choice if you are looking for a quick, healthy & no fuss meal. Sometimes weeks can be super super busy – combining work and social life, working off the “TO DO LISTS” (I also have “to do lists” for my private life – I love lists, starting from shopping lists, to presents for Eve’s second Easter egg hunt and cleaning lists.) When I get busy, I personally tend to quick, easy and no cook meals and still aspire healthy food. Avocado Toast is one of my all time favorites.

One of the secrets for a good avocado toast is to use a soft ripe avocado because then your topping will get creamier. Today I want to introduce you to my basic & spicy version – these two I really eat a lot because I always have the ingredients at home and the possibilities and variations to pimp them are endless. Avocado Toast two ways

 

BASIC AVOCADO TOAST:

INGREDIENTS:

  • 1 ripe avocado
  • 1/2 lemon, squeezed
  • 1 teaspoon olive oil
  • a pinch of salt & pepper
  • cottage cheese
  • 2 slices of toasts
  • watercress, or normal cress
  • Optional: soft boiled egg on top

DIRECTIONS:

  • Start toasting your bread lightly. In the meantime you can scoop the avocado flesh out of the skin and place in a bowl – start mashing the flesh with a fork until your desired consistency.
  • Add the lemon juice, olive oil, a pinch of salt and pepper and stir to combine.
  • Spread your cottage cheese on the bread then spread the avocado half over each piece of toast.
  • Decorate with watercress or normal cress.

 

SPICY AVOCADO TOAST:

This version I would definitely recommend for brunches on the weekend – I learned for myself eating raw garlic and having an office day isn’t the best combination, especially not for your colleagues 🙂

 INGREDIENTS:

  • 1 ripe avocado
  • 1/2 lemon, squeezed
  • 1 teaspoon olive oil
  • a pinch of salt & pepper
  • 1 small garlic clove, pressed
  • an extra pinch of piri piri
  • 2 slices of toasts
  • cottage cheese
  • 1 teaspoon basil seeds
  • watercress, or normal cress
  • Optional: 2 eggs on top

DIRECTIONS:

  • If you want a medium soft boiled egg on your toast place the egg in a saucepan and cover with cold water. Set over medium high heat and bring to a boil and let cook for about five minutes. Take the egg and put it in cold water till it gets the right temperature to tough, normal (30seconds to 1 minute) and peel the egg.
  • While the egg is cooking start toasting your bread lightly. In the meantime you can scoop the avocado flesh out of the skin and place in a bowl – start mashing the flesh with a fork until your desired consistency.
  • Add the lemon juice, olive oil, a pinch of salt and pepper, garlic, piri piri and stir to combine.
  • Spread your cottage cheese on the bread then spread the avocado half over each piece of toast. Place the egg on top.
  • Decorate with watercress or normal cress and sprinkle with basil seeds.
